Thanks for the quick reply!
I had been using UNetbootin. I tried a couple of goes with the LinuxLiveUSB, but don't seem to be able to get persistence working. I thought there may be a 'Persistant' boot option based on the Lili documentation, but no luck.
I guess I may have to just bite the bullet and try a dual boot install option... Will update if find any success
